Berry Crumble Bars with Fresh Fruit
These berry crumble bars are made with a buttery shortbread dough that's used for both the crust and the crumble. In between is a creamy custard-like filling dotted with fresh blackberries and raspberries forming bars that are firm enough to eat with your fingers.

Crust
- 3 cups flour
- 1 ½ cups sugar
- ¼ teaspoon salt
- 1 ½ cups butter cut into 1 inch cubes
Filling
- 2 cups sugar
- ¾ cup flour
- ¼ teaspoon salt
- 4 eggs room temp
- 1 cup sour cream
- 1 cup blackberries
- 1 cup raspberries
Crust:
In the bowl of a stand mixer, add flour, sugar and salt and mix to combine. With the mixer on low, add the butter a little at a time until it begins to come together but does not form a dough, about 5 minutes.
Remove 1 ½ cups for the topping and refrigerate. Place the rest in the prepared pan, evenly covering the bottom, patting with your hands. Bake for 15-18 minutes until lightly golden brown. Let cool for 10 minutes.
Filling:
In a large bowl, whisk the sugar, flour and salt together. Add the eggs and sour cream and whisk until smooth. Fold in the fruit and pour over the baked crust, spread the fruit out evenly. Sprinkle the reserved crust evenly over the top of the fruit mixture. Bake for 45-50 minutes until the top is golden brown. Cool on a wire rack before cutting.
- You can add other berries, but don't use frozen, they will be too watery.
