These Mixed Berry Crumble Bars are the perfect easy treat for spring and summer. It’s a simple recipe with minimal prep but big results. Each bite has sweet fresh berries surrounded by a firm custard like filling.

The filling is kind of like a custard mixture but a little thicker. Not as dense as a blondie but thicker than a homemade lemon bar. The filling sets as it bakes, with the berries dotted throughout. I used blackberries and raspberries, but you could swap these out with other berries.

This recipe begins with a basic shortbread crust made with lots of butter. Part is pressed into a pan and baked until set before adding the filling.

The final step is the crumble topping, which is some of the remaining crust that’s sprinkled on top for a buttery, crumbly finish. This method is perfect because you don’t need extra ingredients to make a crumble topping. 

Once the bars come out of the oven and have cooled, you can cut them into bars. They’re easier than a pie and are perfect for bringing to parties and potlucks. If you’re making a dessert tray, try pairing these with some double chocolate chunk cookies. These Berry Crumb Bars Won’t Last Long

Ingredients

Crust

  • 3 cups flour
  • 1 ½ cups sugar
  • ¼ teaspoon salt
  • 1 ½ cups butter cut into 1 inch cubes

Filling

  • 2 cups sugar
  • ¾ cup flour
  • ¼ teaspoon salt
  • 4 eggs room temp
  • 1 cup sour cream
  • 1 cup blackberries
  • 1 cup raspberries

Instructions

  • Preheat the oven to 350º. Line a 9 x 13 baking pan with parchment paper.

Crust:

  • In the bowl of a stand mixer, add flour, sugar and salt and mix to combine. With the mixer on low, add the butter a little at a time until it begins to come together but does not form a dough, about 5 minutes.
  • Remove 1 ½ cups for the topping and refrigerate. Place the rest in the prepared pan, evenly covering the bottom, patting with your hands. Bake for 15-18 minutes until lightly golden brown. Let cool for 10 minutes.

Filling:

  • In a large bowl, whisk the sugar, flour and salt together. Add the eggs and sour cream and whisk until smooth. Fold in the fruit and pour over the baked crust, spread the fruit out evenly. Sprinkle the reserved crust evenly over the top of the fruit mixture. Bake for 45-50 minutes until the top is golden brown. Cool on a wire rack before cutting.

Notes

  • You can add other berries, but don’t use frozen, they will be too watery.

    1. These are made in a 9 x 13 inch pan lined with parchment paper. If you don’t line it with parchment, then you should lightly spray the pan with cooking spray.
