Shortbread Toffee Bars with Pecans

These toffee bars start with a buttery shortbread crust instead of the usual graham cracker base, then get a gooey sweetened condensed milk layer baked right on top. Milk chocolate, toffee bits, and salted pecans go on last, while everything’s still warm from the oven. It’s a straightforward bake with no fussy steps, just let the layers do their work as they cool.

Toffee bits and salted pecans get pressed into the warm chocolate before it sets, so every square gets a little crunch and salt with the sweetness.

Shortbread Instead of Graham Crackers

Most toffee bar recipes start with a graham cracker crust, and there’s nothing wrong with that version. This one uses a simple shortbread base instead, just butter, brown sugar, and flour pressed into the pan and baked until golden.

The real reason to make the swap is flavor: shortbread bakes up rich and buttery in a way graham crackers just can’t match, and that flavor comes through in every bite instead of getting lost under the toffee and chocolate. Once the condensed milk layer bakes into something closer to caramel and the chocolate sets on top, that buttery base is still what ties the whole bar together.

Bars That Actually Hold Together

Most bar cookies with a crumbly base fall apart the second you pick one up, and that’s the exact problem this recipe was built to fix. The shortbread crust here isn’t a random swap, it’s the direct answer to that crumb problem: butter, brown sugar, and flour pressed firm and baked until golden gives you a base sturdy enough to hold the toffee filling and chocolate layer without buckling. Pick one up and it stays in one piece, no plate required, the same shortbread base that makes these pecan bars with a toasted pecan filling hold together just as well.

Pecans Do More Than Add Crunch

Toffee bars are sweet, and this recipe doesn’t pretend otherwise, the condensed milk layer and milk chocolate top are both doing exactly what you’d expect. Salted pecans on top are what keep that sweetness from turning into too much of a good thing. Chopped small and pressed into the warm chocolate, they add a salty, crunchy contrast that breaks up each bite instead of letting the sugar sit unchecked.

A Few Things to Know Before You Start

  • These are a dessert-tray bar, not a mail-a-box-of-cookies bar. The chocolate and toffee layer doesn’t hold up well to shipping or sitting out warm, so plan on serving them from a tray or container rather than packaging them to send. If you need something that travels, these gooey carmelitas with a browned butter oat crust are sturdy enough to ship even in warm weather.
  • Chill completely before cutting. The layers need time to firm up, and cutting too early gives you a messy square instead of a clean one.
  • Chop the pecans fairly small. Big pieces make the bars harder to cut through once everything sets.

What You’ll Need

You’ll find exact amounts in the recipe card at the bottom of the post.

  • Sweetened condensed milk: Make sure the can says sweetened condensed, not evaporated. They look similar on the shelf but behave completely differently once baked.
  • Milk chocolate chips: These give the sweetest result and balance the buttery shortbread. Semi-sweet or dark chocolate chips work in the same amount if you want to dial the sweetness back.
  • Toffee bits: Look for them in the baking aisle near the chocolate chips. Crushed Heath bars work just as well if that’s what you have on hand.
  • Salted pecans: Chop them fairly small. Bigger pieces sit on top instead of pressing into the chocolate, and they make the bars harder to cut through cleanly once everything sets.

Bake the Crust, Add the Filling, Finish with Chocolate

Step Two: Add The Condensed Milk Layer

Microwave the sweetened condensed milk with the butter until the butter has melted, then stir until smooth. Pour it over the hot crust and return the pan to the oven.

Step Three: Bake Until Bubbly

Bake again until the filling is bubbling and just starting to turn golden in spots.

Step Four: Melt The Chocolate

As soon as the pan comes out of the oven, sprinkle the chocolate chips over the top and return it to the oven briefly. Once the chocolate softens, spread it into an even layer with an offset spatula or the back of a spoon.

Step Five: Add The Toppings

Step Six: Cool And Chill

Let the bars cool completely, then refrigerate until firm before cutting. This is the easiest way to get clean squares.

These toffee bars are proof that a sturdier crust and a handful of pecans can turn a good dessert bar into one that actually holds together, literally and in flavor.

Equipment

Ingredients

  • ¾ cup unsalted butter room temp
  • ¾ cup brown sugar
  • 1 ½ cups all-purpose flour
  • 1 can sweetened condensed milk 14 ounces
  • 2 tablespoons unsalted butter
  • 2 cups milk chocolate chips
  • ½ cup toffee pieces
  • ½ cup salted pecans chopped

Instructions

  • Preheat oven to 350º and line an 8 x 8 inch baking pan with parchment paper.
  • Beat ¾ cup of butter and brown sugar until combined, add flour and mix. It should look like cookie dough. Press into the prepared pan and bake for 15 minutes until lightly golden brown.
  • Combine condensed milk and 2 tablespoons of butter in a microwave safe bowl and microwave until the butter is just melted, about 1 minute. Pour over shortbread and bake for an additional 12-15 minutes until it is bubbly and starting to turn brown.
  • Remove from the oven and immediately sprinkle chocolate chips over the top. Return to the oven for 2 minutes. Remove and using an off-set spatula, spread the chocolate chips evenly over the top. Sprinkle with toffee bits and chopped pecans and lightly press them into the chocolate mixture. Let cool completely. Refrigerate before cutting.

Notes

  • Let the pan cool completely, then refrigerate before cutting for clean, even squares.
  • The condensed milk layer is done when it’s bubbling across the whole pan, not just at the edges.
  • Line the pan with parchment paper, leaving an overhang, so the bars lift out in one piece instead of having to dig them out.
  • Store at room temperature for a couple of days or in the fridge for up to a week, freezes well for up to 2 months.
