Creamy Sorbet With Fresh Peaches

- ½ cup sugar
- ½ cup water
- ¼ cup light corn syrup
- 3 cups peaches peeled and sliced
- 1 tablespoon lemon juice
- ¼ teaspoon salt
Add sugar, water and corn syrup to a saucepan and heat over medium heat. Bring to a boil and boil for about a minute until the sugar has dissolved. Cool to room temperature.
Place the peaches in a food processor or blender with lemon juice, salt and cooled syrup. Process until it is smooth and there are no lumps, about 1-2 minutes depending on how firm the peaches are.
Process in an ice cream maker per the manufacturer’s instructions, it will take about 20 minutes. Freeze for about 2 hours for firm sorbet.
- Make sure you have frozen the ice cream maker, it must be cold before adding the sorbet.
- If you're in a hurry, place the syrup in the freezer to cool.
- It should take about 2 hours for the sorbet to freeze to a hard state after processing.
