Unlike my recipe for peach ice cream, this peach sorbet recipe uses zero dairy, which makes it a great option for large gatherings, birthday parties, or cookouts where people have different dietary requirements. This showstopper of a dessert uses just a few ingredients, a blender, and an ice cream machine. (If you don’t have an ice cream maker, keep reading; you can still make this!)

Light, icy, and made with ripe juicy peaches, this is a refreshing treat for this time of year. While I love creamy peach ice cream on a hot summer day, there’s something special about fruity sorbet made at the height of peach season. Since there’s no extra fat from the dairy and not much sugar, all the flavor comes from the fresh fruit, which turns this simple treat into an extraordinary one. 

The secret to a creamy sorbet without using cream is the addition of corn syrup.

With all the flavor comes from the peaches themselves, make sure you use ripe enough ones. Vibrant peach skins, a fragrant scent, and just a little give when you squeeze is how you’ll know your peaches are ready to be made into sorbet—or to eat plain! I like to serve this peach sorbet recipe in individual cups or glasses, garnished with peach slices.

What’s The Difference Between Ice Cream And Sorbet? 

The main difference between ice cream and sorbet is that ice cream has milk or cream, while sorbet is made without dairy and uses fruit, juice, or fruit puree as its base. Sorbet is almost always fruit-based, while ice cream can be made with fruit, coffee, chocolate, or peanut butter to name just a few. Sorbet tends to be a little tart and icy, while ice cream is generally soft, sweet, and creamy. I think both are the perfect summer treat! 

Unlike ice cream, you don’t have to refrigerate the sorbet before adding it to the ice cream maker. Just mix and add to the Ice cream maker. If you want semi-soft sorbet, you can have it in less than an hour. Since it doesn’t have dairy, it will freeze much quicker than ice cream if you want hard frozen scoops. Either way, you don’t have to refrigerate for four hours like you do for custard based ice cream.

Homemade Peach Sorbet Has Only a Couple of Ingredients

Peaches and a lemon– You’ll need three cups of sliced and peeled peaches. We’re removing the skins so that no chunks are left behind. The lemon juice perks up the flavor.

Sugar and corn syrup– Corn syrup adds sweetness along with giving it a creamier texture than if using just sugar.

Step One: Boil Sugar

Add sugar, water, and corn syrup to a saucepan and heat over medium heat. Bring to a boil for about a minute or until the sugar has dissolved. Set aside and let cool to room temperature.

Step Two: Blend Peaches

Place the peaches in a food processor or blender with lemon juice, salt, and cooled syrup. Process until smooth and free of lumps, about 1-2 minutes, depending on how firm the peaches are.

Step Three: Make Sorbet

Process in an ice cream maker per the manufacturer’s instructions; it will take about 20 minutes. Freeze for about two hours for a firm sorbet. 

What If I Don’t Have An Ice Cream Maker? 

If you don’t have an ice cream machine, you can stop after the blending step! It won’t have the exact smooth texture we’re going for, but it’ll still be a wonderful sorbet. Blend everything until smooth, pour the mixture into a shallow dish, and freeze. Every 30 minutes for about 2–3 hours, you’ll want to break up the ice crystals and stir until the sorbet is completely frozen. 

How To Store Homemade Sorbet

In The Freezer: This frozen treat can be stored in an airtight container for months. The real question is, will it even last that long?

Notes

  • Make sure you have frozen the ice cream maker, it must be cold before adding the sorbet.
  • If you’re in a hurry, place the syrup in the freezer to cool. 
  • It should take about 2 hours for the sorbet to freeze to a hard state after processing.
