Crispy Oatmeal Apple Crisp with a Warm, Juicy Cinnamon Filling

There’s something magical about that first spoonful of apple crisp, the way the buttery oat topping cracks under your spoon, giving way to a bubbling layer of cinnamon-spiced apples. This Oatmeal Apple Crisp is everything a fall dessert should be: crisp on top, soft underneath, and just sweet enough to let the apples shine. It’s simple, cozy, and always a hit at gatherings.

Ingredients

  • 5-6 medium apples peeled and cut into ½ inch chunks (8 cups)
  • ½ cup brown sugar
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1 tablespoon apple brandy optional

Topping

  • ¾ cup flour
  • ¾ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ cup butter cold and cut into ½ inch cubes
  • 1 cup old-fashioned rolled oats

Instructions

  • Preheat the oven to 350º.
  • Add the chopped apples to a large bowl. Add brown sugar, cinnamon, nutmeg, vanilla and apple brandy if using. Stir to combine and pour into a 9 x 13 inch baking dish.
  • In a medium bowl, whisk together the flour, brown sugar and cinnamon. Add cold butter cubes and use a pastry cutter or fork to incorporate it into the dry ingredients. Once combined, add the oatmeal and sprinkle over the apples.
  • Bake for 1 hour until the apples are fork tender, and it is bubbling around the edges.

Notes

  • Try using a mixture of apples for a more complex flavor.
  • The baking time will vary depending on the type of apple. They should be fork tender before removing from the oven.
