This is a basic apple crisp recipe that’s so simple to put together and tastes timeless. Chunks of apples bake down into a warm, cinnamon-spiced filling while the oat topping gets crisp and golden.

You can use any variety of apples, but a mix of tart and sweet gives the best flavor. I personally like a tart apple like Honeycrisp.

If you have apple brandy on hand, a splash adds a hint of warmth and helps boost the apple flavor. Totally optional, but worth it if you like a little extra depth.

There are some cobblers and crisps that you can only make when fruit is in season like a juicy peach cobbler cake, or a skillet blackberry cobbler. But since you can get sweet crisp apples anytime, this is the dessert that I keep in mind when I’m in a hurry and want a comfort food dessert regardless of what time of year it is.

The topping is a simple mix of flour, oats, brown sugar, and butter, cut together until crumbly. Old-fashioned rolled oats give the topping the perfect texture. They crisp up beautifully without feeling heavy.

  • Apples: Use 5–6 medium apples for about 8 cups total. Honeycrisp, Granny Smith, or a mix of tart and sweet varieties all work.
  • Apple Brandy (optional): A splash makes the apple flavor pop without making it boozy. If you don’t have it, the crisp is still fantastic without.

How to Turn Fresh Apples Into a Cozy Dessert

Step One: Prep the Apples

Step Two: Make the Topping

Ingredients

  • 5-6 medium apples peeled and cut into ½ inch chunks (8 cups)
  • ½ cup brown sugar
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1 tablespoon apple brandy optional

Topping

  • ¾ cup flour
  • ¾ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ cup butter cold and cut into ½ inch cubes
  • 1 cup old-fashioned rolled oats

Instructions

  • Preheat the oven to 350º.
  • Add the chopped apples to a large bowl. Add brown sugar, cinnamon, nutmeg, vanilla and apple brandy if using. Stir to combine and pour into a 9 x 13 inch baking dish.
  • In a medium bowl, whisk together the flour, brown sugar and cinnamon. Add cold butter cubes and use a pastry cutter or fork to incorporate it into the dry ingredients. Once combined, add the oatmeal and sprinkle over the apples.
  • Bake for 1 hour until the apples are fork tender, and it is bubbling around the edges.

Notes

  • Try using a mixture of apples for a more complex flavor.
  • The baking time will vary depending on the type of apple. They should be fork tender before removing from the oven.
