S’mores bars give you everything you love about a classic campfire treat, gooey marshmallows, melted chocolate, and that irresistible pull, without stepping outside. A chocolate Rice Krispie base keeps things easy, while a quick trip under the broiler gives you that golden, toasted top.

No Campfire? These S’mores Bars Still Deliver the Gooey Bite
If you like s’mores but do not want to stand over a fire, this recipe gets you there with a lot less effort. The base is a chocolate-loaded Rice Krispie layer made from melted butter, mini marshmallows, and a mix of dark and milk chocolate, so it tastes more like a fudgy candy bar than a plain cereal treat.
Once it is cold and set, cover the top with more mini marshmallows and slip the pan under the broiler until they are roasted and golden.
You don’t need anything fancy to make them. A box of crisped rice cereal, mini marshmallows, some chocolate, and a stick of butter will do it. Using both dark and milk chocolate keeps things balanced, but you can use whatever chocolate you already have in the pantry. Everything melts together in one big bowl, goes into an 8 x 8 pan, and chills while you do something else.
These bars work well for summer get-togethers when it is too hot for a fire, for birthday parties, or for a movie night when you want something a little nostalgic.
They’re closest to the real thing right after you toast the top, while the marshmallows are still soft and stretchy. Once they cool, the top sets up enough to stack them in a container for later snacking.
Use up the extra Rice Krispies in a batch of peanut butter chocolate treats or try a brown butter version.

Cereal, Chocolate, and Marshmallows

- Mini marshmallows: You will use some for the chocolate base and some for the toasted topping.
- Dark and milk chocolate: A mix of chopped dark and milk chocolate is my favorite. However, any kind of chocolate chips or chopped bars will work.
Making Chocolate Marshmallow Rice Krispie Bars
Step One: Melt the Marshmallows and Chocolate
Microwave in steps: Heat in 20 to 30 second intervals and stir often so nothing scorches.





Step Two: Add the Cereal

Watch closely: Stay by the oven because the marshmallows can go from toasted to burned very quickly.


Step Four: Cut and Serve
Cut the bars right away while the marshmallow topping is still warm and stretchy, then serve them straight from the pan. If you need something salty to offset the sweet, try a batch of homemade buttery Chex mix.

Ingredients
- ½ cup butter
- 16 ounces mini marshmallows divided
- 6 ounces dark chocolate chopped
- 4 ounces milk chocolate chopped
- 1 teaspoon vanilla
- 4 cups crisped rice cereal
Instructions
- Line an 8 x 8 inch pan with parchment paper and butter the parchment and sides of the pan.
- In a large microwave safe bowl, combine butter and 10 ounces of mini marshmallows. Microwave until melted and smooth checking every 30 seconds. Immediately add all the chopped chocolate and microwave for a few seconds until melted, add vanilla.
- With a rubber spatula fold in the cereal quickly before the mixture gets cold. Press into the prepared baking dish and refrigerate until set, about 1 hour.
- Turn on the broiler of oven. Top cooled bars with mini marshmallows so that the top is covered, about 6 ounces. Place under broiler and cook for 1-2 minutes, until golden brown. Watch carefully so that they don’t burn. Cut right away and serve while still warm.
Notes
- Instead of the microwave, you can melt the butter and marshmallows in a saucepan over medium heat and add the chocolate once it’s melted.
